Vanilla-Bean Banana Ice-cream

A simple recipe for a thick, creamy and silky non-dairy vanilla bean ice cream.

 
 

Produce

1 can — Full fat coconut milk, chilled overnight

2 — Bananas, sliced and frozen

1/4 cup — Raw cashew butter

1/4 cup — Maple syrup or 4 — Medjool dates, pitted

1 — Vanilla pod

1/2 tsp — Sea salt

Specifications

Add all ingredients into a high-speed blender and blend until completely smooth and creamy, scraping down the sides as needed. Serve straight away for soft-serve ice cream or freeze for at least 1 hour for more scoopable ice cream. Store in the freezer for up to 1 week.
