Creamy, sweet and extremely delicious. Horchata is a traditional Mexican drink made from simple pantry ingredients.

 
 

Produce

1/2 cup — Uncooked white rice

1/2 cup — Almonds, raw and blanched

3 cups — Water

5 — Medjool dates, pitted

1 — Pure vanilla bean

1 tsp — Ground cinnamon

Specifications

Soak the rice and almonds in 2 cups of very hot water for around 2 hours. Rinse and drain. Blend the rice, almonds, dates, vanilla bean and cinnamon in a high-speed blender until the mixture is smooth and creamy. Let it sit in the fridge for at least 3 hours, but preferably overnight. Strain the mixture with a nut milk bag. Squeeze to get as much liquid out as possible. Discard or set aside the pulp for another recipe and take the good stuff (the liquid). Serve with ice and a sprinkle of cinnamon.

If you have leftovers, chill the liquid in the fridge for up to 2 — 3 days. The horchata will settle as it sits in the fridge, so make sure to stir before serving it. You can also turn them into popsicles and freeze them in the freezer for up to a month!
