Vanilla Almond Milk

Extremely creamy, foamy and slightly sweet.

 
 

Produce

1 cup — Raw almonds, soaked

3 cups — Filtered water

1/2 stick — Vanilla

2 — Medjool dates

1 pinch — Salt

Specifications

Measure out 1 cup of almonds and rinse well. Transfer the almonds to a bowl and cover with at least twice the volume of water overnight. When the almonds are ready, dump them in a colander and rinse well with several changes of water. Add the ingredients into a high-speed blender and blend on high until the milk is creamy and smooth (for about 2 min). Strain the milk into a nut milk bag over a mixing bowl until all of the liquid is extracted. Transfer the strained milk into an air-tight bottle and keep it in the fridge for up to 4 — 5 days. Shake well before drinking, as it tends to separate.
