Roasted Yellow Plum Tomato Pasta

A sweet, tangy and decadent pasta recipe made with roasted yellow plum tomatoes.

 
 

Produce

500 g — Yellow plum tomatoes

200 g — Pasta of choice

4 cloves — Garlic, minced

3 tbsp — Olive oil

Salt and pepper to taste

Specifications

Preheat the oven to 180°C (350°F).

Wash the tomatoes and thoroughly dry them. Cut them in half.

Spread the tomatoes onto a baking tray. Drizzle with olive oil, minced garlic, salt and pepper.

Toss until the tomatoes are well coated with oil and spread them out into one layer.

Roast for around 35 min, until the tomatoes are collapsing and slightly charred. Toss halfway.

Put a pot of water on to boil. Once it reaches a rolling boil, add some salt to the water, and add your pasta. Cook the pasta until it is al dente.

Combine the pasta with the cooked tomatoes, and toss well. Add some pasta water if the dish requires a little extra liquid.

Serve with a sprinkle of nutritional yeast and/or cheese.
