Billowy and smooth — this beet hummus has a slightly earthy and lemony taste. It’s super creamy, flavourful and extremely simple to make.
Produce
1 medium — Roasted golden beetroot
1 can — Cooked chickpeas
2 ½ tbsp — Tahini
1 tbsp — Olive oil
2 cloves — Garlic
½ large — Organic lemon, juiced and zested
1/2 tsp — Turmeric
¼ tsp — Cumin
Salt and Pepper, to taste
Specifications
Place the beetroot, chickpeas and garlic into a food processor and blend into small pieces. Add tahini, olive oil, lemon juice, cumin, salt and pepper and blend until smooth. If necessary, add more water to thin. Taste and adjust seasonings as needed. Serve as a dip with raw vegetables or crackers or use as a spread. It will keep in the fridge for up to a week.
